How to Store & Shuck Oysters

The Thimble Island Oyster Company of Connecticut has produced an article and video on how to store and shuck oysters.
Among the tips are:
- an oyster’s taste fades as it ages
- oysters should be refrigerated out of water
- oysters must be eaten alive, or cooked alive
- the shells of live oysters are normally tightly closed or snap shut given a slight tap
- if an oyster’s shell is open, the oyster is dead and cannot be eaten safely
- cooking oysters in the shell kills them and causes the shells to open
- oysters that don’t open after being cooked should be discarded
